Faux Acai Bowl – Faux Dairy Free & Naturally Sweet!


Earlier this week I was lying wide awake in bed creating recipes in my head at 3:30 am. I laid in bed for another hour and a half until the gym opened at 5a, went to my workout, came back home, and setup in the kitchen! Was able to put the ideas to the blender, and was pleasantly surprised!

I’ve recently started a kick with making simple kale smoothies with spinach, blueberries, and Vietnamese cinnamon. I used to make them often in the past, but took a long vacation from them. The final product came out as a dark, rich, purple, similar to the color of acai. This instantly triggered my initial thought, “could I make a mock acai bowl out of this?”

I have nothing against using the unsweetened acai packs. However, if you don’t have them in your freezer ( like I didn’t), then this will still do the job!

I purposely chose to create this smoothie blend without any banana for an important reason: higher sugar fruits in the morning tend to disrupt blood sugar balance, preventing long lasting & sustaining energy… The chances of having a blood sugar crash sooner than later increases with higher sugar fruits first thing in the morning. Blueberries are a healthy way to still enjoy that bit of sweetness, with a glycemic index that is low enough to match the body at its highest time of insulin resistance, and loaded with anti-oxidants!

Without using acai, the bowl loses its Amazonian flavor. So, I chose to use one of my favorites, Lucuma, to keep the South American Amazonian twist! Just so happens to be from Peru, where my family originates from 🙂 The flesh of lucuma has also shown to have natural antibiotic, antimicrobial, and anti fungal properties! I also love using lucuma as its a great alternative for those that are in any type of diabetic state. Its a fantastic natural sweetener.

As I’ve spoken before, its critical to use the synergistic component, Vietnamese cinnamon when using fruit. It helps the body to uptake & absorb greater amounts of the nutrition available in the foods.

The fiber content from the spinach and kale also help to maintain satisfaction, satiety, and blood sugar stability 🙂 Along with the benefits of fiber, kale and spinach offer great amounts of vitamins, minerals, healthy fat, and even some protein!

Organic Faux Acai Ingredients

1/2 – 1 cup purple kale

1 – 1.5 cups spinach

1.5 cups of frozen blueberries (or mixed berries)

1 heaping tablespoon Lucuma

1/2 Tsp Vietnamese Cinnamon

4 oat milk oz purified water 

Bowl Toppings

1/4 cup Ezekial sprouted granola

Sliced banana ( if desired )

Sliced strawberries ( any desired amount )

1 Tsp bee pollen

1 tsp drizzled raw honey ( most desirable after 3pm )

2 sliced figs ( low glycemic, & they’re in season right now! )



Slice all of your bowl toppings before blending. This way, once your faux acai is blended to your perfection, & its ready to eat at its prime texture.

Blend all of the faux acai ingredients together at low to medium speed. If the mixture is too thick, then add more water. If your greens over power the blueberries, then just add more frozen berries!picstitch(7)

Once blended, pour blender contents into your favorite bowl.


I like to lay my granola down as my first layer of toppings over faux acai. Following the granola, lay down your strawberries, bee pollen, and drizzle of honey over the top. Add an extra dash of vietnamese cinnamon, or any other favorite toppings!

Enjoy this faux acai bowl as the weather gets warmer, or all year round! Feel free to modify with banana as a base in the faux acai blend if your enjoying after 3pm.picstitch

I’m not a fan of using store-bought milk alternatives due to additives in them. If you’re a raw milk lover, then you can absolutely use this as the acai base! Or if you’d prefer to stick to dairy free, then you’d love using this oat milk!

I’ve done it, and it turns out fantastically!
