Welcome Mac n’ Cheese Back Into Your Life

This is a “To Live For” recipe that has been worked on for over a year by my mentors! I’ve been raving about it to all of my clients. I haven’t come across one person yet that does not LOVE it!

Of course, there’s not a moment that goes by where I do not make what my mentors create.

So, I present to you the greatest way to eat rice! Fermented.

Eating rice in its fermented form with the addition of fresh ground, un-oxidized turmeric enhances the bio-availability (the amount of nutrition your body can absorb) of the rice, while ushering in probiotics (good bacteria) to support gut health!


1 cup Organic Brown, Red Bhutanese, or Wild Black rice
1 heaping Teaspoon of Premier Turmeric
2 Tablespoons Alessi Aged Red Balsamic Vinegar
1 Teaspoon of Organic Ground Oregano Leaf

Step 1: Soak Your Rice

Soaking your rice for 20 mins – 1hr flushes out the phytic acids from the grain. Phytic acids bind to minerals & metals in your soft tissue & bone! The last thing you want is for your food to contribute to de-mineralizing you! Soaking your rice also enhances your health by decreasing the amount of cook time! Meaning, less inflammation! When you’re done soaking your rice, you need to rinse it thoroughly. Otherwise, you’ll be eating the phytates all over again.Make sure to use purified water.

Step 2: Cook Rice

Not much explanation really needed to cook rice. But for those of you who have never cooked rice before…Once you have rinsed your rice, place it into a pot with purified water. You will not need to cook the rice as long as you would without soaking the rice. For 1 cup of rice, use 2 cups water. Cook rice on medium – high for 10-15 minutes. Then, turn off the heat with the lid on the pot. Let sit for 10 minutes. Rice grain should be soft.

Step 3: Add Ingredients

With the rice in the pot, add your fresh ground turmeric  (Premier Turmeric preferred), ground oregano leaf , Alessi Aged Red Balsamic Vinegar (this vinegar is preferred with its outstanding quality. Surprisingly its found at Ralph’s, & even on Amazon!). Mix all ingredients thoroughly throughout rice using a wooden spoon.

Step 4: Pack It

Firmly pack the mixed rice in your mason jar. Prevent any air pockets from forming in the jar. Leave one inch from the rice to the rim of the jar. Use a cheese cloth or a paper towel to cover the top of the jar, using a rubber band to hold the cloth in place.

Step 5: Place It

Place your jar next to your dehydrator so that the jar and dehydrator are touching.Your dehydrator should be set at105°. Let it ferment for 24-48 hrs! The best way to check that you have the right temperature is to touch your mason jar after it has been sitting for 1-3 hrs. If the jar is slightly warm, everything is golden! If your jar is room temperature with no warmth, you may have to increase the heat by 5-10°. What really determines the temperature is your home environment. So, you may have to play around with it!

Step 6: Feast

Once your rice is done fermenting,  the top layer may be hard. You can take that part off. You will want to check that your rice is not moldy! If it is, you will have to make a brand new batch…Using the correct amount of Oregano Leaf will help to prevent mold, as it serves as a natural anti-biotic (anti-pathogenic; kills bad bacteria!).

Once your rice is done fermenting, its ready to prepare for some comfort eating! If you are not planning to eat it immediately, you may refrigerate it for 1-2 weeks max.


Warm some water in a pan, and add the amount of rice you would like to eat. Once warm, add a tablespoon of raw butter (Organic Pastures is the best!) and a few dashes of Premier Pink Salt.

If done correctly, it should taste just like the blue box Kraft macaroni & cheese!

When combining fermented rice with beans, you now have a meal of complete protein!
